BBQ Bacon & Mushroom Ranch Burger Casserole

INGREDIENTS

1 lb Ground Beef
8 Gold Potatoes (Chopped)
4 Slices Thick Cut Bacon (Chopped)
1 Vidalia Onion (Diced)
6 Baby Bella Mushrooms (Sliced & Halved)
2 Green Bell Peppers (Diced)
4 CLoves Garlic (Minced)
2 Tomatoes (Diced)
4 TBSP Worcestershire Sauce
1 Stick + 2 TBSP Butter
1/2 Cup BBQ Sauce
2 Cups Shredded Cheddar Cheese
6 TBSP Ranch Seasoning
Parsley (Garnish)

DIRECTIONS

  1. Heat oven to 375 degrees farenheit. Bake potatoes with 1 stick of butter in a 9×13 inch baking dish for 25-30 minutes, or until tender.
  2. Meanwhile, in a large skillet on medium heat, use remaining butter to cook onion, garlic, green peppers, and mushrooms until fragrant (1-2 minutes).
  3. Add ground beef and bacon to pan. Flavor with worcestershire sauce and ranch seasoning. Fully cook ground beef.
  4. Add tomatoes and cook 1-2 minutes. Drain excess juices and return mixture to skillet. Turn heat off and mix in bbq sauce.
  5. Add mixture to potatoes. Top with cheese and bake until cheese is melted. Garnish with parsley and let cool for 10 minutes before serving.
