INGREDIENTS
1 lb Ground Beef
8 Gold Potatoes (Chopped)
4 Slices Thick Cut Bacon (Chopped)
1 Vidalia Onion (Diced)
6 Baby Bella Mushrooms (Sliced & Halved)
2 Green Bell Peppers (Diced)
4 CLoves Garlic (Minced)
2 Tomatoes (Diced)
4 TBSP Worcestershire Sauce
1 Stick + 2 TBSP Butter
1/2 Cup BBQ Sauce
2 Cups Shredded Cheddar Cheese
6 TBSP Ranch Seasoning
Parsley (Garnish)
DIRECTIONS
- Heat oven to 375 degrees farenheit. Bake potatoes with 1 stick of butter in a 9×13 inch baking dish for 25-30 minutes, or until tender.
- Meanwhile, in a large skillet on medium heat, use remaining butter to cook onion, garlic, green peppers, and mushrooms until fragrant (1-2 minutes).
- Add ground beef and bacon to pan. Flavor with worcestershire sauce and ranch seasoning. Fully cook ground beef.
- Add tomatoes and cook 1-2 minutes. Drain excess juices and return mixture to skillet. Turn heat off and mix in bbq sauce.
- Add mixture to potatoes. Top with cheese and bake until cheese is melted. Garnish with parsley and let cool for 10 minutes before serving.
