Spicy Breakfast Burritos

Serving Size: 4 Burritos

Remove seeds from jalapenos for less spice if desired.

INGREDIENTS

6 Eggs
6 Slices Thick Cut Bacon (Chopped)
2 Jalapenos (Sliced)
2 TBSP Olive Oil (Divided)
1 Cup Salsa Verde
3-4 Cups Shredded Mozzarella
1 TBSP Cilantro
Sea Salt & Pepper (To Taste)
Burrito Tortillas

DIRECTIONS

  1. Preheat oven to 325 degrees farenheit. Prepare a baking dish by coating it with 1 TBSP olive oil to prevent burritos from sticking. I line my dish with aluminum foil, then use a paper towel to lighty coat the whole dish.
  2. Cook bacon to desired crispiness in a large skillet. Add eggs to skillet (don’t remove bacon) and scramble. As eggs are cooking, flavor with salt, pepper, salsa verde and cilantro.
  3. Heat 1 TBSP olive oil in a smaller skillet and cook jalapenos until slightly charred. Set aside.

Note: Jalapenos are very potent while cooking. You may need a gas mask, haha. Seriously, though, keep that in mind.

  1. Fill tortillas with desired amount of cheese and egg mixture. Shape into burritos and place in baking dish. Top burritos with a little more salsa verde, cheese and desired amout of jalapeno slices.
  2. Bake until cheese is melted (5-10 minutes) and serve.
