INGREDIENTS
2 Small Chicken Breasts
4 Slices Thick Cut Bacon
Homegrown Honey BBQ Sauce
Olive Oil
Sea Salt (To Taste)
2 TBSP Butter
1 Sweet Onion (Sliced)
3-4 Baby Bella Mushrooms (Sliced)
1 Green Pepper (Sliced)
3 Cloves Garlic (Chopped)
2 Gold Potatoes (Baked)
Parsley (Garnish)
DIRECTIONS
- Preheat oven to 375 degrees farenheit.
- Prepare homegrown honey BBQ sauce and use it to marinade chicken breasts (1-2 cups per breast) as you complete the following steps.
- Prepare potatoes by coating them in desired amount of salt and olive oil. Wrap with aluminum foil. Place in 9 x 13 baking dish, also lined with foil. Place in oven.
- Allow potatoes to bake for a while (I usually give them 20 minutes). Then, wrap chicken breasts with bacon (2 slices each). Place them in the baking dish with potatoes and coat each breast with an additional cup of sauce. You may have some leftover for dipping if desired. Continue baking 40-45 minutes, or until chicken is 165 degrees.
- Add butter, garlic, onion, mushrooms, and green pepper to a large, hot, skillet and saute until tender and fragrant (about 5 minutes).
- Garnish chicken with parsley, top potatoes with your favorite toppings, and enjoy!
