Chicken Burritos in Homemade White Sauce

Yield: 5 Burritos

INGREDIENTS

1.5 lbs Chicken Breasts (Shredded)
5 Burrito Tortillas
5 TBSP Butter + 2 TBSP
Light Olive Oil
16 oz Salsa (Divided)
1 Cup Sour Cream
3 TBSP Flour
1 TBSP Cumin
1 TBSP Cilantro
Shredded Mozzarella & Cheddar (1-2 Cups each, Combined)
1-2 Cups Shredded Mozzarella (Topping)
Chives (Garnish)

DIRECTIONS

  1. Preheat oven to 350 F. Prepare 9×13 inch baking dish by covering with aluminum foil and lightly coating foil with light olive oil.
  2. As oven heats, boil and shred chicken breasts. Then heat 2 TBSP butter in large skillet. Combine chicken, cumin, cilantro, 8 oz salsa (I use homemade but feel free to use your favorite) and combined cheeses until well combined and cheese is melted.
  3. Prepare white sauce: melt 5 TBSP butter on medium heat, then whisk in flour. Once smooth, slowly pour in chicken broth, whisking continuously. Whisk in sour cream and remaining 8 oz salsa.
  4. Heat tortillas 30-45 seconds in microwave (or you can toast them in butter for a few seconds in another skillet).
  5. Spoon chicken filling on to a tortilla and fold into burrito. Place in baking dish and repeat until all burritos are placed. Pour white sauce over burritos and top each one with mozzarella. Bake 20-25 minutes. Garnish with chives, let rest a few minutes and serve.
