INGREDIENTS
1 lb Ground Beef
1 tsp Olive Oil (plus 1 tsp for baking dish)
1 Sweet Onion (Diced)
4 Cloves Garlic (Roughly Chopped)
Mild Cheddar Cheese (Shredded)
7 oz Can Chipotles in Adobo Sauce
32 oz Refried Beans (Store Bought or Homemade)
5 oz Red Enchilada Sauce
Sea Salt & Pepper (To Taste)
2 TBSP Oregano
1 TBSP Cumin
7-8 Burrito Tortillas
Cilantro (Garnish)
DIRECTIONS
- Heat oven to 250 degrees Farenheit. Prepare a 9×13 baking dish by covering with aluminum foil and coating with olive oil.
- Heat olive in large skillet on medium heat. Saute onions and garlic until fragrant (2 minutes).
- Add ground beef to skillet and brown. Add dry seasonings while cooking. Drain excess grease and return to skillet. Mix in can of chipotles in adobo sauce, breaking up the chilies as you mix. Turn off heat.
- Meanwhile, heat refried beans in a separate pot. Add at least 1 cup of cheese and stir in until melted.
- Heat tortillas for 30 seconds in microwave. Assemble burritos by spooning desired amount of beans, then cheese, then meat and roll into burrito shape. Place each one in baking dish.
- Pour enchilada sauce over the burritos and top with more cheese. Bake 10-15 minutes until cheese is melted. Garnish with cilantro and enjoy.
